Hand destemmed and fermented using wild yeast. Maturation in old oak for 25 months.

No fining or filtration used. Only sulphur added.

Medium bodied with energetic acidity and tannic structure that will allow the wine to age. Notes of dried herbs, cherries and orange peel. Worth the wait but good to drink now with food.
